Homemade Rolls in 1 hour Guaranteed

  1. Before we even get started, I have to tell you the difference between this roll recipe and the others you have seen or used. THESE delicious beauties only have to rise once for 15 minutes. So, for the first time in my life, I was able to make rolls, and bake them all within 1 HOUR! It’s life changing <—and that’s not a ploy to catch your attention. It’s actually true. Here’s proof: 

I made homemade rolls yesterday instead of going to Costco and buying a bag. I think it’s a miracle, and I think it’s something that needs to be shared from the rooftops.My friend Jamie shared her roll recipe with me a few months ago, and ever since, I feel like Martha Stewart because, no big deal,  I make homemade rolls now. I feel like I’m growing up right before my own eyes. Before, Costco rolls were my best friend. I’m not dogging Costco rolls because I’m sure I’ll still buy them occasionally.

When the thought “It will just be easier to make them” literally crossed my mind, I knew I had to share this recipe, and Jamie gave me permission. THANKS JAME!

Homemade Rolls in 1 hour Guaranteed

Ingredients

  • 1 cup butter {I use salted butter}
  • 3 cups milk {I use 1% milk, but you can use whatever you have on hand}
  • 1 cup sugar
  • 1 cup water hot
  • 4 eggs large
  • 11 cups flour {I use bread flour}
  • 4 Tbsp dry active yeast The exact yeast I use is found: http://amzn.to/2jVjAPS
  • 4 tsp salt

Instructions

  1. Combine butter, milk, water and sugar in a microwave safe bowl.
  2. Heat for 3 minutes in the microwave.
  3. Add to Bosch or Kitchen aid mixer with a dough hook.
  4. Add eggs and half the flour.
  5. Mix well.
  6. Add yeast and salt continue mixing.
  7. Add remaining flour and mix completely
  8. After it’s fully mixed, set to high and knead for 11 minutes.
  9. Divide into three equal balls. {mine is pretty sticky at this point. So I add a little flour while I’m removing it from the bowl.
  10. Roll each section one at a time on a floured surface into a circle.
  11. Cut into pizza shaped wedges. {I do 18 per wedges per circle}
  12. Roll the dough from wide side to the small side like a croissant.
  13. Place on greased baking sheet.
  14. Let raise 15 minutes until puffy. I covered mine with a kitchen cloth during the raising process.
  15. Bake at 375 for 10-12 min. I baked mine 12, they were still doughy at 10 min.
  16. Rub butter ont top after they come out of the oven.

    1. I found this info: Active dry yeast and instant (or rapid-rise) yeast are the two most common yeasts available to us as home bakers. The two yeasts can be used interchangeably in recipes, but active dry yeast needs to be dissolved in water before using while instant yeast can be mixed right into the dough.Nov 14, 2012

      1. According to this info, the particular active yeast listed in the recipe would be proofed, but this recipe shows it doesn’t have to be for it to work in it. ; ) Yea!

  1. Yummy! Do you think this recipe could be cut into thirds & still work well? We don’t eat bread at our house so I wouldn’t want to make that many.

    1. I know that halfing the recipe works great, not sure on doing thirds. But if you try it, let me know if it works well!

  2. Looks like it would be easy to halve this recipe, but would I halve the amount of yeast as I would the rest of the ingredients? We don’t eat a ton of rolls, plus I’m not sure my KitchenAid Artisan can handle 11 cups of flour. Thanks for posting–must try this!

      The Bosch mixer will hold 15 cups of flour and has an 800 watt motor. It’s a powerhouse but will also do smaller batches.

  3. Ladies make a full batch,bake and when cool out in a freezer bag and freeze them. Just pop out what you need later .

    They turned out great! I even used 1/3 of the dough for caramel rolls. Fantastic flavored dough. Sticky to work with but oh so worth it!

    When I saw that the liquid was microwaved for three minutes I was skeptical.
    However I did try it and I followed the recipe to the letter with the exception that I let the dough rest 15 min before shaping the rolls; I kid you not this recipe is the bomb!!!
    they were perfect, soft and oh so good. everyone at my Easter dinner raved.

    Hi
    Can you tell me what the measures of ingredients would be for uk (and other countries!)? We don’t measure by cups here and I’m confused!
    Also, did some mention turning them into caramel rolls?! That sounds gorgeous!! How did you do that?!

  9. This may be a dumb question, but do you just measure out the yeast and put it in without mixing it in warm water and sugar and letting it sit for 5 minutes

    1. Put them on the stove in a saucepan until they start warming up. The butter shouldn’t be completely melted though. Just warm them up to the point that the butter starts to get melty along the edges.

  10. Probably a crazy question but here goes …. does it matter what kind of milk you use in baking? We normally have skim on hand, but do I need whole for baking in general? Thanks

    1. Great question! I normally use 1% milk just because that is what we normally have on hand. I’m guessing the more fat content in the milk, the more rich the rolls would be. I’m usually one to never omit the fat content just because it makes it so yummy. 🙂 But in this case, I use what I have on hand and that is 1% at my house.

  11. Does it really say 11 cups of flour!?!?!? I love me a good sweet roll, but 11 cups sounds like a lot! Even if I halve it!… please tell me if it truly are 11 cups. Thx!
