Hi All! It’s Gina from Kleinworth & Co. It’s August- can you believe it? I know many are already preparing for or have already gone back to school. So I thought I would bring you all one of our favorite grab & go breakfast recipes. These banana apple muffins are so easy to make & perfect for when you need breakfast quick. I know that mornings can be so hectic, but it’s so important to keep it healthy to start the day off right. I love that I can use up my aging, over-ripe bananas in this recipe too. Every week we buy bananas & my kids will neglect them until they absolutely have to do something with them. I secretly think it’s so we have an excuse to make tasty things like these muffins.
A few years ago I started a test to see how long I could go without buying ready-made breakfast items. I thought that I had enough breakfast recipes that were simple & easy enough to make in bulk that I could get away with not buying toaster items or boxed cereal. I was right, now 3 years later, we have all but eliminated those items from our list each week. I just double my recipes when I want to make enough to last the whole week. It works out great, even when feeding 3 hungry teens.
My kids just love these muffins. They combine all their favorite flavors- banana, apple & lots of cinnamon. Cinnamon is a heavily used ingredient in our house & it pairs so nicely with apples & bananas. Mmmm- they smell so good too! These are just perfect for a fall morning when rushing off to school.
Banana Apple Muffins
Ingredients
- 1 cup butter- softened
- 1-1/2 cup sugar
- 2 eggs
- 2 mashed bananas
- 4 cups all-purpose flour
- 5 tsp baking powder
- 1 tsp salt
- 3/4 cup Lactaid
- 1 tsp vanilla extract
- 3 cups chopped apples
- 6 tbsp sugar
- 1 tsp cinnamon
Instructions

Preheat oven to 400 degrees & prepare your muffin tins. Set aside.

Cream butter & sugar in large mixer bowl.

Add egg & bananas- mix well.

Mix flour, baking powder & salt in small bowl. Set aside.

Mix cinnamon & sugar in small bowl & transfer to bowl with apples. Stir to coat apples.

Add flour mixture & Lactaid to butter mixture & beat on medium speed until well combined.

Add vanilla- beat in.

Fold in apples.

Spoon batter into prepared muffin pans (this made 34 muffins)

Combine additional cinnamon & sugar & sprinkle on top of each muffin before baking (optional)

Bake for 20 minutes.

Remove & cool on wire rack 10 minutes.

Store in air tight container for up to 4 days.

What can be used in place of lactaid? Would love to make these tonight!
You can use milk if you wish
IS there reason to use lactaid instead of regular milk?
For those that are lactose intolerant. Feel free to use milk if it agrees with you.
