Super Easy Breakfast Burritos + Ideas for feeding TEENS!

 Happppppy Thursday friends!! Jo here and I am so happy to be back. I have a delicious recipe to share with you today PLUS a few of my very favorite GO-TO teen meal ideas. 

A couple weeks ago Brooke and I were traveling home from a quick day trip to Vegas. As we were driving, I started chatting about trying to be the “cool mom” and always have good food on hand without going broke…  because feeding 4-5 12 y.o. boys is NO joke! I mean they legit ate an ENTIRE brand new box of Family Size Lucky Charms in one sitting the last time they were over. I kinda wanted to cry. Ha! 😉 Well Brooke being the experienced veteran that she is {she’s got TWO teens!!} said she felt my pain and thus started our list of GO-TO teen meals/snacks/food ideas. **I do need to say that I don’t do this all the time. But if the boys are over, I want them to feel comfortable enough to stick around for dinner if it permits or even just have a good snack. Food is my love language and so if I can show them they are loved and welcome at my house anytime by feeding them, then so be it! 😉 

When it comes to feeding the boys, I tired to think of things that I ALWAYS have on hand but that were different then your normal chicken nuggets or ramen noodles. I was thinking more like the stuff you always grab at Costco whether or not you need it because you know that you WILL inevitably need it. So here is what Brooke and I came up with:

  • SHEET NACHOS 
    • These are so easy and no meat is required! I take a bag of tortilla chips, spread them out on a cookie sheet, top with lots of shredded cheese, maybe a can of beans if I have one. Then throw them in the oven until the cheese is melted and serve with salsa and sour cream. The boys LOVED these and they were totally gone. BONUS: The next time these were made, the kids did it themselves! #winning 
  • PANCAKES
    • I mean, does it get any cheaper than that? And the best part is boys don’t need a bunch of fancy toppings. You can make a ton of these, plus they are so filling. We always use peanut butter and syrup on ours but I mean, just plain syrup is good too! 
  • CHILI OR HOT DOGS
    • Our grill is right out our back door so to throw some hot dogs on takes no time at all. Plus while I do that, they can get the chili and cheese ready and any other toppings they might want too. If I happen to have chips, I’ll let them have those too but that doesn’t happen very often. 
  • SPAGHETTI 
    • This one might surprise you but did you know that boys will eat plain marinara with noodles?! Ha! This is amazing because pasta is seriously so cheap and so is a jar of sauce. This one obviously takes a little more prep and time but if you are feeding them an actual dinner, this is definitely a good option. {because who doesn’t always have spaghetti ingredients on hand?}  Also if you wanna get really generous, you can make Brooke’s delicious homemade Alfredo! It’s a crowd pleaser and oh so good! Yum. 
  • QUESADILLAS
    • Now this one isn’t new BUT Brooke has a special way of making these delicious cheese pillows of heaven that I have carried over to my house. First you NEED to have one of these. Ok, it’s not mandatory but they are pretty awesome. Here’s what you do: tortilla, refried beans, cheese, shredded chicken {the canned Costco kind is our fav} and then a few dallops of Macayo’s Taco Sauce. Life. Made. These are so good and always a hit! 
  • BREAKFAST BURRITOS
    • And last but not least, today’s recipe. I made these as a freezer meal for a neighbor friend and there happened to be some cute boys hanging out at the time so I popped some in the oven and put the rest in the freezer to deliver to her on a later date. The boys loved them and requested that I make another batch!  Now you will ALWAYS find these in my freezer at any given point… for breakfast, lunch or dinner! The best part is the hubby loves them too and that’s always a challenge when it comes to quick meals.

Easy Breakfast Breakfast Burritos

These are so yummy, kid friendly and can be frozen! 

Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes

Ingredients

  • 3 cups shredded hash browns
  • 10 slices chopped bacon
  • 12 large eggs
  • 8-10 flour tortillas
  • 1 c diced deli ham
  • 2 c shredded cheese {whatever kind you like}
  • 1/4 c milk
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Cook potatoes according to package and then set aside. 

  2. Cook bacon until done and then crumble. {Or used precooked bacon which is my personal favorite!}

  3. In a mixing bowl, gently beat eggs, milk, salt and pepper.

  4. Cook your eggs over medium heat, until completely cooked. Set aside.


  5. In a large bowl, combine cooked potatoes, cooked eggs, bacon, diced ham and shredded cheese. Don't over mix.


  6. Once that is combined, place 1/2 cup of mixture onto the center of your tortilla. Roll them up tightly and then place seam side down onto greased cookie sheet.


  7. If you make extra to freeze {which I recommend} place the rolled burritos directly into a ziplock bag. You can freeze these for up to 3 months.


  8. When ready to eat frozen, just pop them in the microwave for 2 minutes on high, flip, then repeat for another 2 minutes.

     

  9. Or you can also bake them at 375 for approx 20 minutes.

Recipe Notes

  • Just plan on making extra... you might as well since you're already going to the trouble of making a batch. Plus they will FOR SURE get eaten

  • We love to dip these in taco sauce or sour cream. So good! 
  •  
  • Make sure to try these using other ingredients as well. ie. veggies, sausage, different cheeses!

 

Here they are all ready to go into the freezer! I hope this post has been helpful! I would also like to hear of any of your GO-TO Teen meals because lets be honest, this list will only last me so long!

    I have been making a similar freezer breakfast burrito for awhile now. My husband absolutely loves them, and they’ve become a staple in the freezer. What I love most about your recipe is how you mix it all together and measure it out. Wow! Total game changer!! The recipe I’ve been using makes 32, and takes too long, so I’ll be mixing and scooping from now on. Thank you!!
