Hi my friends! It’s Gina from Kleinworth & Co. It is great to be back with you again today! Early spring temperatures decided they wanted to come back for a while up here in North Idaho. So I have abandoned my frozen goodies & decided I needed to do a little baking. I had picked up a little too much zucchini at the market & was wondering what I should do with it all. The kids reminded me that it had been way too long since we have made this Double Chocolate Zucchini Loaf. I completely agreed & knew that I really should make some while I was in the baking mood.

Double Chocolate Zucchini Loaf is a rich & decadent bread recipe. Packed full of chocolate chips, this is one snack that you’ll look forward to all day long. I love this recipe because it’s so easy. I just toss everything in a bowl & mix. It doesn’t require a whole lot of steps & man is it delicious. It’s a really good thing this recipe makes two loaves- because one certainly isn’t enough in this house.

 

Zucchini bread recipe

I started making this recipe many years ago when my mother-in-law would give us baskets full of zucchini when we would head over for a visit. Her neighbors had a garden & she often would get all kinds of free fruits & veggies from them. It was always more than her & my father-in-law could enjoy so we were lucky to receive all the extras. Even with our growing family we always had too much as well. So I would spend a couple hours with the food processor & the vacuum sealer on a Saturday. I would have enough packets of zucchini to make this bread for a year. Not a bad deal if you ask me & no one in the house complained one bit.

This bread is packed full of chocolate. We usually enjoy it over coffee in the mornings, but there have been times when we had it with a scoop of ice cream for dessert too. I love recipes that are good enough that I can start & end my day with them. WIN-WIN!

You know, this would make a great neighbor gift too. With all the zucchini that will be available over the summer, you could make this all season long.

Double Chocolate Zucchini Loaf

Double Chocolate Zucchini Loaf is a rich & decadent bread recipe. Packed full of chocolate chips, this is one snack that you'll look forward to all day long.
Servings 20

Ingredients

  • 4 cups grated zucchini
  • 3 eggs
  • 1 cup canola oil
  • 2 tsp vanilla extract
  • 1-1/2 cups granulated sugar
  • 3 cups all-purpose flour
  • 1/2 cup cocoa powder not Dutch processed
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1 tsp salt
  • 3/4 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray 2 loaf pans with cooking spray- set aside.
  3. In a large bowl- sift together sugar, flour, cocoa powder, cinnamon, baking soda & salt.
  4. In a smaller bowl whisk together eggs, oil & vanilla.
  5. Pour into dry mixture & mix in with a large spatula. The mixture will be very dry & pasty until you mix in the remaining ingredients.
  6. Fold in zucchini & then chocolate chips.
  7. Transfer to your prepared pans & smooth out.
  8. Bake for 50-60 minutes for small loaf pans, 70-80 minutes for larger ones. I used one of each.
  9. Pull out when toothpick test comes out clean.
  10. ENJOY!
