Hi All! It’s Gina from Kleinworth & Co. Do you love blueberries? We sure do & this time of year gets really exciting because we start seeing our blueberry bushes loading up. We know it won’t be long before we are making this Blueberry Pie Snack Cake over & over again.
When I was young we would visit my stepmom’s parents when I would be with them for the weekend. Every single time we went over there, her mom would have some sort of snack cake for us to enjoy. I was always amazed by the fact that she always had some sort of freshly baked treat when we arrived. The house smelled incredible. That was certainly a highlight of my weekend visits with them. Even though my mom & I had our share of goodies & cake in the house, for some reason, snack cake wasn’t often served. It really was a special treat.
So as you can imagine, she had quite the variety of snack cake recipes to make for us. But my favorite was always this Blueberry Pie Snack Cake. I have never been a huge fan of blueberry pie all by itself, but I really love my blueberry pie bars recipe that I have been making for as long as I can remember. This snack cake of hers really reminded me of those bars, only in cake form. Being that cake is one of my favorite things on the planet, I immediately fell in love with this recipe.
Once the cake is cooled, you can serve it up in a variety of different ways. I like it with just a little dusting of confectioner’s sugar on top. But my family loves to have it a la mode, which is great too. Sometimes we like to just add a little dollop of whipped cream & some fresh blueberries. It really just depends on your preference & the occasion you are making it for. I hope you love this as much as we do.

Blueberry Pie Snack Cake
Ingredients
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/2 stick butter - room temp (1/4 cup)
- 1-1/4 cup milk
- 1-1/4 tsp vanilla extract
- 1 large egg
- 1/2 tsp table salt
- 2 tsp baking powder
- 2 cups fresh/frozen blueberries
Streusel
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 4 tbsp cold butter
Instructions

Preheat oven to 350 degrees.

Prepare 9x13 glass baking dish with cooking spray- set aside.

In stand mixer- mix all ingredients for the cake- withholding the blueberries for later.

Beat on low- scraping down the sides until combined.

Pour into prepared pan.

Top with blueberries.

Combine streusel ingredients in a small bowl & mix with a fork until crumbly.

Sprinkle over top of batter & blueberries.

Bake 45-55 minutes or until toothpick test is clean.

Let cool for about 30 minutes before serving.
