Hi All! It’s Gina from Kleinworth & Co. Do you love peanut butter & chocolate paired together? It is a favorite combo in our house. So we make these Chocolate Peanut Butter Sandwich Cookies all the time. I mean, you just can’t beat soft & chewy chocolate cookies made with Nutella & topped with sea salt. Then we sandwich them together with peanut butter & it is pure bliss!
I really love these cookies because they satisfy so many different cravings all at once. You get that super sweet, rich, salty, decadent, chewy goodness in each & every bite. These are a favorite when we bring them to holiday parties, bunco night & pretty much anywhere else. Seems everyone loves that chocolate & peanut butter combo. No wonder it’s so popular.
Now, if you don’t want to do peanut butter, these are great with more Nutella for the inside too. Since this recipe makes about 18-20 cookie sandwiches, if you are feeding a whole lot of people, you could forgo the sandwich & just spread the peanut butter on top of each cookie & maybe add some sprinkles. People will still love them just as much- trust me! These are amazing no matter how you assemble them.
Just think of how fun these would be at your next gathering. My friends request this recipe quite often & I don’t blame them. With all that chewy chocolaty goodness, it’s almost like a thin brownie edge. Everyone loves the brownie edges – right? Mmmm, just thinking about it makes me want to make another batch. But then making them into a sandwich with a peanut butter filling – it really is an over the top dessert I know you’ll love.

Peanut Butter Chocolate Brownie Cookies
Chocolate Peanut Butter Sandwich Cookies
Ingredients
- 1 ¼ cup all-purpose flour
- ½ cup cocoa powder
- ¼ cup oats lightly ground
- 1 tsp baking soda
- ¼ tsp baking powder
- ¾ cup 1 ½ sticks butter, room temperature
- 2 Tbsp Nutella
- 1 ½ cup granulated sugar
- 1 egg
- Coarse sea salt
Filling
- 1 cup peanut butter
Instructions

Preheat oven to 375°F.

Line baking sheets with parchment paper - set aside.

Whisk together flour, cocoa powder, oats, baking soda & baking powder. Set aside.

Beat together butter, Nutella & sugar until light & fluffy.

Mix in egg.

Slowly add in flour mixture until evenly incorporated.

Roll dough into tablespoon-sized balls.

Flatten balls with the bottom of a glass & sprinkle with sea salt.

Bake for 8-10 minutes.

Cool for 3 minutes on a baking sheet & transfer to a cooling rack.
Assembly
-
Allow cookies to cool completely.

Spread peanut butter between two cookies to made sandwich.
