Hi All! It’s Gina from Kleinworth & Co. Fall has really set in here in North Idaho & that means we are enjoying all the cozy goodness of fall flavors like pumpkin & cinnamon. One of my favorite things to do on a chilly weekend morning is to make a huge family breakfast to enjoy with a fire going. We do all the favorites, eggs, bacon, sausage patties, homefries & of course pancakes. Sometimes I even whip up a batch of my homemade buttermilk syrup or in this case pumpkin spice syrup. Mmmmmmmmm that homemade syrup on top of these delicious Cinnamon Pumpkin Pancakes is just the BEST EVER!

We sure love adding cinnamon flavor to so many things. My son is crazy for cinnamon & so whenever we can add it to things like a breakfast dish, we usually do. You really just can’t go wrong with a churro-like pumpkin pancake topped with mini chocolate chips. It’s all the favorites made into a delicious stack of goodness right there on your plate. I mean, they really are a mega upgrade to a traditional breakfast, don’t you think? I’m telling you – these are the perfect blend of all things fall & you will LOVE every bit of it!

Just look at that cinnamon/sugar coating. Then those melty mini chocolate chips – my goodness, it makes me want to make more as I write this. YUM-O! It’s not uncommon for us to double or triple this recipe in order to have enough to feed the whole family. So break out that griddle & whip up several batches for a whole lot of BIG SMILES! I guarantee you will not disappoint with these babies! They are over the top amazing!

CINNAMON PUMPKIN PANCAKES

Cinnamon Pumpkin Pancakes - easy to make & packed full of all those favorite fall flavors.

Ingredients

  • 2 cups pancake mix
  • 2 tsp ground cinnamon
  • 12- ounces whole milk
  • ½ cup pumpkin puree not pie filling
  • 2 tbsp vegetable or canola oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup mini chocolate chips
  • 3 tbsp cinnamon/sugar mix for dusting 4:1 ratio

Instructions

  1. Heat griddle to 350 degrees or heat large skillet over medium heat
  2. Combine pancake mix & cinnamon in a large mixing bowl.
  3. Add milk, pumpkin, oil, eggs & vanilla. Beat until smooth.
  4. Fold in mini chocolate chips
  5. Ladle the batter onto the hot griddle or pan
  6. Cook until the tops are bubbly & the edges dry
  7. Flip & cook until bottoms are golden
  8. Remove & sprinkle with cinnamon & sugar mixture
  9. Serve with butter, maple syrup & additional chocolate chips
