Hi my friends! It’s Gina from Kleinworth & Co. It is great to be back with you again today! Melting yet? Man, it seems like overnight it just became really warm & I’m ready for a cool down.
One thing I love to make is super fun & easy desserts. Over the weekend we packed up the camper & headed over to Montana for a few days. I made sure to plan ahead so we could make these super delicious Gluten Free Chocolate Chip Cookie Sundaes. I stocked our little fridge & freezer before we left & surprised the family with these adorable treats one evening.
Now, I didn’t really intend to make these gluten-free. But that was all the cookie dough the store had at the time. You can certainly make these with regular cookie dough too. But knowing that most ice cream, sherbet, sorbet, popsicles, whipped topping, and egg custards are gluten free it made it easy to create the whole dessert for gluten-free diets. You can also find gluten-free chocolate sauce & cherries – so that’s a big win too!
These were so simple to make. Just portion out your cookie dough into the muffin tins & bake. Then top with the ice cream of choice & any other toppings you desire. It really does make it so easy to have a quick dessert when camping in the trailer. Oh, how I love having baked goodies when I’m out in in the middle of nowhere.
I mean, cookies already smell amazing on any given day. But I can’t even begin to tell you just how incredible they smell when out in the wilderness. We had all the other campers around us talking about this epic camping dessert. They all wanted some, that is for sure.
These are fabulous for any backyard bbqs, birthday parties or just enjoying after dinner. So simple & completely customizable. If you make the cookie cups ahead of time, you can just zap them in the microwave for a couple seconds so they are warm before you top them with ice cream. The warm cookie cup with that scoop of ice cream is AH-MAZ-ING!

Quarter Pound Chocolate Chip Cookies

Gluten Free Chocolate Chip Cookie Sundae
Ingredients
- 1 container Gluten Free Cookie Dough
- Gluten Free Ice Cream
- Whip Cream
- Chocolate Syrup
- Cherries
Instructions

Preheat oven to 350 degrees

Spray your muffin tin with cooking spray

Take large tablespoonfuls of dough & press into the bottom of each well of your muffin tin - they should be packed in & filled about 1/2 - 3/4 full.

Bake 12-15 minutes or until golden brown & no longer gooey in the center.

Cool IN your muffin tins at least 10 minutes before removing - serve warm

Top with one large scoop of gluten free ice cream of choice

Add whip cream, chocolate syrup & cherry.
