Hi All! It’s Gina from Kleinworth & Co. I’m getting super excited for the warmer weather to come. But for now, it is still cold & rainy here in North Idaho. So I’m still making simple comfort foods, like this Hearty Chicken Soup that easily fills up my hungry family of 5.
I sure love a hearty dinner. When it is cold or dreary outside, all I want to do is curl up on the couch in front of the fire with something warm. It seems that I tend to be perpetually cold & I’m always looking forward to something to help me take the chill off. This soup is perfect for that.
This recipe just sort of happened by accident one afternoon. I was searching for something to make for dinner as usual. Apparently, I’m bad about planning that sort of stuff out. I had a whole bunch of leftovers, but not enough of any one thing to really fill up the family. At that point, this is where soup comes in because you can toss all those small portions together in a broth & create something large enough to feed a crowd. That’s exactly what I did here.
Most of these ingredients were leftovers from tacos the night before. But I wanted it extra hearty because, with all these growing kids & a husband that seems to never be full, I needed more. Problem solved with just a couple potatoes. They are so great as a filler & adding bulk to so many dishes.
This is a dinner that my family requests often. I sure hope your family loves it as much as mine does. It comes together quick & no one leaves the table hungry.

Hearty Chicken Soup
Ingredients
- 2 cups water
- 4 cups chicken broth
- 2 cans corn 14oz
- 3 cups chicken cooked/shredded
- 2 sweet chili's finely chopped
- 2 russet potatoes peeled & diced
- 1 red potato diced
- 1 can black beans 15 oz
- 1-1/3 cup sour cream
- 2 tbsp minced onions
- 1-1/2 cups cheddar cheese shredded
- 1/4 cup instant mashed potato flakes
- salt, pepper & granulated garlic to taste
Instructions

Combine water, broth & chicken to large stock pot & heat on high

Add in seasonings & bring to a boil while you are dicing & chopping your potatoes & chilis

Add in potatoes, chilis, corn & beans.

Continue to boil until your potatoes are fork tender. Est 20-30 min. Remove from heat

Add cheese - stirring to combine well. Should melt throughout with no clumps

Slowly add sour cream - tablespoonfuls at a time. Stir well until no lumps remain.

Finally, add instant potato flakes to thicken your soup & make it extra creamy. Stir well - serve.
