Hello there All Things Thrifty friends! It’s Gina from Kleinworth & Co. I hope you had a wonderful holiday. Are you feeling the need to clear & declutter now? I certainly am. I love this time of year – this special little week between Christmas & New Year’s. I like to spend this time clearing things out, packing up files into boxes & getting my nest ready for a new year. It’s the perfect thing to do when it’s chilly outside & I can’t be out working in the yard or working on larger projects that take me outside. When I’m done I like to whip up a big pot of soup like this Hearty Tomato Soup.
This soup is filling – packed full of ground sausage & elbow macaroni. Sometimes I top it with a few croutons.
So good that you’ll want to go back for seconds – but you might be too full.
Tomato based soups are one of my favorites to make. It’s rich, flavorful & packed full of nutrients. I find myself craving some sort of tomato soup when I go longer than a couple weeks between making some. You can’t go wrong.
I typically make a double batch so we can have leftovers for the next night. Makes the perfect dinner when we come home late from the gym & the last thing I want to do is cook. Add a little slice of French bread on the side – delicious. This is a great recipe for company too. If you make that double batch it’s just perfect for a hungry crowd.
Ingredients
1 pound ground sausage
1 (28 ounce) can crushed tomatoes
16 ounces chicken stock
1/2 qt half & half
1/2 cup evaporated milk
2 tbsp minced onion
1/4 tbsp garlic paste
2 tbsp stick butter
2 cups elbow macaroni
6 ounces shredded Parmesan cheese
Salt, pepper, granulated garlic to taste
Instructions
Brown sausage in large skillet over med-high heat adding seasonings (onions, garlic, salt, pepper & granulated garlic) as you cook
Add crushed tomatoes, chicken stock, browned ground sausage with seasonings to a large stock pot.
Bring to a boil- stirring frequently – Add additional seasonings to taste.
Continue to boil 5-10 minutes for flavors to marry
In another stockpot cook your macaroni to package directions & drain
Reduce heat on soup & slowly add in half & half & evaporated milk – stir well
Bring soup to a simmer- Do Not Boil. Simmer about 5 minutes
Add in Parmesan cheese & cooked macaroni
Stir until cheese has melted & blended into the soup.
Serve with a little more cheese on top
