I have fond memories of Elementary School, and these peanut butter bars are still a favorite of mine. I loved the days that these were part of lunch as a kid.

Lunch Lady Peanut Butter Bars
Prep Time 10 minutes
Cook Time 15 minutes
Ingredients
- 1 cup salted butter
- 1 cup sugar
- 1 cup brown sugar
- 1 tsp vanilla
- 2 eggs
- 2 cups creamy peanut butter {divided}
- 2 cups old fashioned oatmeal
- 2 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1/4-1/2 cup milk
- 1 cup chocolate chips {or more depending on your personal preference}
Instructions

Cream the salted butter and the sugars together until smooth.

Add the eggs, vanilla, and 1 cup peanut butter.

Add oatmeal and mix thoroughly.

Mix the flour, baking soda, and salt separately, and add gradually.

Press into a jelly roll pan {cookie sheet}

Bake at 350 degrees for 15 minutes.

While the bars are baking, combine 1/4 c milk and 1 cup of peanut butter and blend until smooth. Add more milk if you need to until it's creamy.

After the bars come out of the oven, carefully spread the whipped peanut butter over the top.

To do so easily, drop small amounts of the peanut butter across the pan and it will be easier to spread.

Sprinkle chocolate chips across the top of the peanut butter, and put the pan back into the hot oven for 1-2 minutes to melt the chocolate chips.

Swirl the peanut butter frosting and chocolate together to create a marbled frosting.

Cool and enjoy.
