Taquitos for the Teenage Crowd
Ingredients
- 4 cans Chili Con Carne {I like Nalley Brand}
- 2 8 oz Cream Cheese
- 1/2 Cup Salsa I like the fresh salsa from Costco
- 3 cups diced cooked chicken I use rotisserie chicken from Costco
- 42 tortillas 8"
Instructions

Pour canned chili into a pot with the cream cheese and stir constantly until cream cheese is completely melted. Remove from heat.

When chili and cream cheese are fully melted, pour in salsa and chicken and mix thoroughly

Use a small spoon or scoop to now add about an 1/8 cup of the chili mixture to the center of each tortilla.

Sprinkle a small amount of shredded cheese on top of the chili mixture and slowly roll the tortilla into a taquito.

Place on parchment paper-lined pan

Spray the tops of the taquitos with cooking spray

Bake at 400 degrees for 20 minutes {I set my oven to convection}
Feeding the masses can be so much fun. Especially if you can find something that the teenagers will love that doesn’t break the bank. Randomly, I tried this self-created taquito recipe, and I was instantly the favorite mom on the block. I even fed them to my adult friends last night and it was an instant hit. So, even though it was intended for teenage consumption, don’t limit yourself.

Yes we freeze them. Bake them first.
