Hi my friends! It’s Gina from Kleinworth & Co. With the holiday season in full swing I’m sure your days are running together at this point. I know life is sure busy around here, which is why I’m always looking for quick meals like this Veggie Chicken Alfredo that can be made in 30 minutes or less.
I don’t know about you, but with all the evening activities that have us running around, I need to get dinner on the table quick. We don’t have a ton of time between when everyone gets home from work and when we are rushing out again. The big meals with lots of dishes must wait for the weekend. But that doesn’t mean we can’t have something super delicious on these busy nights.
Just look at all that goodness in there. This veggie chicken alfredo really is ready in under 30 minutes. You can even make this go a little faster if you wanted to use pre-cooked chicken, rotisserie chicken or by baking some frozen chicken. All are great alternatives for those times when you can’t saute fresh chicken strips.
You can’t go wrong with homemade alfredo sauce and it is so much better than anything you can get in the jar. That being said, if you want to cut more time out of this recipe, you can supplement with a couple jars of your favorite alfredo sauce.
Veggie Chicken Alfredo
If you have teens, this is an easy meal that they can cook on their own. My kids whip this up for themselves when the hubs & I happen to get out just the two of us. It’s not too complicated and gives them confidence in the kitchen.
This meal makes enough for the 5 of us. My kids are all teens to young adults, so this makes plenty for 5 adult portions. You can easily reduce this recipe by half or just enjoy it as leftovers a second night. It keeps really well. Just add a splash of milk to the pasta when reheating.

Veggie Chicken Alfredo
Ingredients
- 4 pieces boneless skinless chicken breast
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp granulated garlic
- 1-3/4 cup grated Parmesan cheese
- 1/2 cup butter
- 1 cup half & half
- 1 bag frozen veggies microwave-steamable
- 1 box fettuccine noodles 12 oz.
Instructions

Cut chicken into chunks & place in skillet

Drizzle a little olive oil over chicken & saute until fully cooked.

Add in spices about halfway through cooking.

Remove from heat & set aside.

In a large stock pot- heat water to boiling.

Cook noodles to package directions (usually 8-11 minutes)

While noodles are cooking, place butter, cheese & half & half in small saucepan & heat over medium - stirring frequently.

Place bag of steamable veggies in microwave & cook to package directions while you are working on the sauce & noodles

Continue to heat the sauce, stirring until all ingredients are melted & fully incorporated.

Remove from heat - set aside.

Once noodles are done cooking- drain & transfer back into stockpot.

Add in cooked chicken, sauce & veggies - stir well
