Hi All! It’s Gina from Kleinworth & Co. I’m so loving this warmer weather. Are you? This is my favorite time of year when all the best flavors are finally available. One thing we always have a lot of is watermelon. We make sure to have one for snacking & an extra one too so we can make this Watermelon-Lemon Sorbet.
Growing up in So Cal, watermelon was a staple during the summer. We never had a party without it. I remember chilling by the pool with my cousins at my aunts house & snacking on watermelon until my stomach hurt. It is the perfect snack because not only does it help you stay hydrated when it’s super hot, but it is so natually sweet & delicious too.
But a while back we lived in Southern Nevada. It was so HOT down there & I was always looking for new & creative ways to cool down. We had a ton of leftover watermelon from our summer holiday parties & I knew we wouldn’t be able to reasonably eat it all before it went bad. So I decided that making a Watermelon Lemon Sorbet would be great. Not only could I create something new with our favorite summer snack, but I could make something that would also cool us down on those intensely hot days.
You won’t believe just how simple this is to make. You only need 4 ingredients – watermelon, granulated sugar, lemon juice & water. That’s it! The prep time is right around 30 minutes & then the hard part is waiting for it to firm up & freeze. That really is the hardest part about making frozen goodies. I get so impatient when it comes to waiting for things to properly freeze before I can have some. But this is well worth the wait. To make it a little easier, I like to make this before I head to bed & let it freeze overnight. Then it is ready to enjoy whenever the craving strikes the next day.

Easy Skinny Ice Cream Sandwiches
Watermelon Lemon Sorbet
Ingredients
- 1-1/2 cups granulated sugar
- 1 cup of water
- 8 cups fresh watermelon - cubed
- 1/4 cup lemon juice
Instructions

Place the water & sugar in a saucepan over medium heat.

Bring to boil & cook until sugar is dissolved & you have your simple syrup.

Remove from heat & allow to cool while you cube & prep your melon.

In a blender, mix together the watermelon cubes, lemon juice & your syrup.

Blend until smooth.

Pour into your ice cream maker & churn for 15-20 minutes.

Transfer to an airtight container & freeze for another couple hours.
