You guys, I LOVE fall! I love that I get to wear hoodies and boots and drink hot chocolate. And then Halloween is coming…. And football. Oh and don’t even get me started on all the pumpkin things… I know, I’m one of those. Don’t judge. 😉
Anyway, today I am sharing with you the yummiest pumpkin bars {with cream cheese frosting} ever! It’s a quick one to make too and is seriously the perfect fall dessert!
This is what it looks like once it has been poured into a greased jelly roll pan. I love that it makes so much, it’s perfect for get-together’s!

Yummy Pumpkin Bars with Cream Cheese Frosting
Ingredients
Mix together these 3 ingredients first:
- 1 Cup Vegetable Oil
- 4 Eggs
- 2 Cups Sugar
Add these:
- 15 oz Can of Pumpkin
- 1 tsp Baking Soda
- 2 tsp Baking Powder
- 2 tsp Cinnamon
- 1/4 tsp salt
- 2 cups Flour
- 1 tsp Vanilla
FROSTING:
- 1 stick Butter, softened {or 1/2 cup}
- 8 oz Cream Cheese, softened
- 1 tsp Vanilla
- 1 1/2-2 Cups Powdered Sugar
Instructions

In a bowl, mix the first three ingredients. Add remaining ingredients. Mix together well. Pour into a greased 1" jelly roll pan {aka cookie sheet} Bake at 350 for 25 mins.
Frosting:

Blend the first 3 ingredients until creamy. Then gradually add powdered sugar until the frosting is spreadable. Spread on top of cooled cake.
Doesn’t that frosting look perfect and fluffy and delicious??
After you make this, it will disappear. We seriously ate it for breakfast, lunch and dinner.

a jelly roll pan won’t fit into my apartment oven … if i bake this in a normal cake pan, what cooking time will it need? .. I would certainly like to bake this one!
